Oven Baked Spicy Sardines With Bread Ala Noor

     Ha ha..  Do you reckon that name will catch on?

     I had a little burst of inspiration on Monday evening.  Mum's been lamenting about having bought too much bread the other day so we had all these days-old bread which were at the risk of going bad any day now.

     I felt especially bad considering I was the one who bought the bread in the first place. LOL. Hey she said she had just cooked fish asam pedas to eat it with so I thought there would be some enthusiasm to get the bread moving! How was I to know that everyone wanted to eat it with rice instead.

     Incidentally, asam pedas is a sour and spicy stew that can be cooked with chicken, beef or fish though the last is the most popular choice.  Funnily enough, Mum cooked it again yesterday so here's a pic so you know what I'm talking about. It was very nice! Yumm!



      But I digress.  I thought it'd be nice to try something savoury instead of the usual bread pudding that we've tried before.  So I came up with this idea just off the top of my head. LOL. A rarity but hey you only live once right? 

     The ingredients for the sauce: 2 cans of sardines, 1 can of button mushroom, 2 big onions, 1 carrot, 2 tomatoes, dried chilli and one clove garlic (blended), salt and sugar to taste





     The onions are first sauted and then the blended chilli is added. The mashed-up sardines and cut mushrooms are added after.  Sugar and salt are then added to taste.




     Voila, the end product:



     I cut the bread into four and soaked it in beaten eggs.



     A layer of sardine sauce, then the grated carrots and sliced tomatoes.




     Topped it off with another layer of cut bread, beaten eggs and sliced cheese and a little bit more sauce and it's ready to go into the oven.


     
     Ten minutes and 170 degrees Celcius later:



     Bon apetit!  It wasn't half bad.  I made two sets and one was polished off the first night with 3/4 of the second left-over for brekkie the next day.  Reckon, I'm gonna try with minced beef the next time.

Ooh! That looks good, might try to do it someday, although with chicken or beef since I'm the only one that likes Sardines in the family, hehe.
